用途：生化研究。蛋白質水解酶中的氨肽酶類之一。這類酶能從多肽鏈上游離的氨基末端（N端）由外向里逐個地把氨基酸切下。亮氨酸氨肽酶不是因為只能水解以亮氨酸（Leu）為N末端殘基的肽鍵，而是水解以亮氨酸為N末端的肽鍵速度為zui快才有這一名稱由來。實際上它同樣可作用于N末端的其他氨基酸。Mg2+或Mn2+是該酶催化作用所必需的。早期它常用于對多肽的氨基酸序列測定。
